Una Mas, nestled on the ground floor of Coogee Pavilion, has recently expanded its culinary repertoire to include a delightful Sunday brunch.

From 9:30 a.m. to 11:30 a.m, this Spanish tapa bar, known for its vibrant Mediterranean cuisine, invites you to stroll in off the sand for a delectable Spanish breakfast curated by the talented Elodie Marion, head pastry chef at both Mimi’s and Una Mas.

The new Sunday brunch at Una Mas is a testament to Chef Marion’s expertise, offering a curated selection of Spanish-inspired pastries, fresh juices, aromatic coffees, and tempting cocktails.

The menu features both sweet and savoury options: for savoury, enjoy chorizo croquette, potato tortilla, and spinach and cheese snail, whilst sweet choices include wheat baguette with butter and jam, tarta de manzana, and San Marco cake. As you savour these delicacies, you’ll understand why the venue’s name, translating to “one more,” is so fitting—you’ll undoubtedly be tempted to indulge in just one more treat.

Una Mas, established in 2020 by Merivale (the group also behind Mimi’s and Will’s), has quickly become a beloved spot in Coogee. 

Whilst the brunch is a new addition, Una Mas has already earned a stellar reputation for its seasonal menu. Among the crowd favourites are the octopus and croquettes, beloved by locals for their rich flavours. For those with a sweet tooth, the Basque cheesecake is a must-try, often praised for its creamy texture and perfect balance of sweetness.

Toast to Cocktails and Breathtaking Views at Will’s at the Coogee Pavilion

Find out why Will’s is a popular choice among Sydney’s best chefs. The cocktail bar, located at the Coogee Pavilion, next to the popular fine dining restaurant Mimi’s, and the tapas bar Una Mas, is the quintessential place for hanging out and enjoying drinks amidst the breathtaking view.



Will’s opened in January 2020 as part of a trio of eateries on the middle floor of the rehabilitated Coogee Pavilion. Offering cocktails with a view, the bar’s bright surrounding during the daytime is perfect for early afternoon indulgences. At night, Will’s mood and vibe are more subdued and fitting for sipping drinks, chatting, unwinding, and capping off a busy day until the late hours. 

The European-inspired location, with leather seats, parquet floors, and a horseshoe bar connotes an easy, flowing, and elegant atmosphere, inviting patrons to bring their friends along or stay awhile and soak in the scenery with a glass of martini. The most popular seats are by the window so that guests can enjoy the view of Coogee Beach.

Will’s cocktail list from day to night features a variety unlike any other. The list changes regularly to incorporate fresh flavours or the season’s best ingredients. However, their martinis, infused with local ingredients instead of vermouth or olive brine, are a consistent favourite.

As with the drinks, the food served at Will’s changes to showcase the best produce available. But patrons may expect to indulge in elevated bar food like spinach croquette romesco or prawn skewer a la plancha with bacon that marries well with their drinks. Patrons could also order food served at Mimi’s and Una Mas.

Coogee Pavilion Has the Perfect Venue for Long Lunches at Mimi’s

“Let’s do lunch,” might have changed in recent times due to the looming public health crisis but Mimi’s, Coogee Pavillion’s new high-end seafood fine dining restaurant, has been holding it out as the perfect venue for long lunches despite opening during a pandemic.



Merivale did not scrimp on its multimillion investment on Mimi’s. It’s beautiful interiors, soft leather seats and large windows with the fantastic panoramic view of the Coogee beach convey luxury and extravagance.

Guests will spare no expense as well when they come to this opulent restaurant. Most diners will say that Mimi’s menu is quite expensive, with the mains priced at $40 and above.

But with carefully curated quality ingredients, creative presentation and attention to detail, a long lunch at this restaurant could be an excellent dining experience, especially if diners ask about the caviar trolley.

Executive chef Jordan Toft changes the menu frequently as well, giving diners more options to come back and try what’s new.

Drawing from his Mediterranean roots, Chef Jordan always infuses his ideas to appeal to the local diners, who won’t hesitate to pay for first-rate food.
